I love cool rainy days (especially when I don't have work!) I can stay in my pj's and relax with kiddies all day. This morning I wanted something warm and Fallish, To me nothing screams more Fall than a Pumpkin Roll. It was too early to make a Pumpkin Roll, I would be starving by the time it was finished!! Instead hot oats inspired by a Pumpkin Roll was created : )
I made my oats a la
Kath style:
1/2 c. Quaker Old Fashioned Oats
Banana
Chia Seeds
1/2 c. Fat Free Milk
1/2 c. Water (I like my oats VERY creamy, almost runny)
pinch of salt
pumkin pie spice
3 heaping TBSP. of Libby's canned Pumpkin
a dash of Vanilla Extract stirred in at the end
After the oats were done cooking, I threw in a wedge of Laughing Cow Cheese Wedge (for the "cream cheese frosting" yuuum)

Stir the cheese in and till slightly melted (you'll have little chunks throughout) and sprinkle with Cinnamon. Amazing, tasted just like a Pumpkin Roll : )

Hope you're all having a great day, see you later!
I love laughing cow in oats!!!! It makes them so creamy and amazing!! :)
ReplyDeleteThat sounds wonderful! I've been smashing 1/2 a banana into my oatmeal in the morning, putting pumpkin in is a wonderful idea!
ReplyDeleteAs for the Oilless turkey fryer, I've never had a deep fried turkey before, but the one made in the turkey fryer was SO MOIST and delicious! Usually for Thanksgiving, we brine our Turkey overnight which means finding a space for a pot big enough to hold the turkey and the brine in the fridge, then I baste it in about a pound of butter. It is good, but with the oilless turkey fryer, it was easy, healthier, (and better!)
Thanks, as always, for visiting Josie!
Every time I visit my grandma she still pulls out a pumpkin roll. Thinking of it brings back memories!
ReplyDeleteThose days are the best!
ReplyDeleteJosie,
ReplyDeleteFollowed your example today. I made buckwheat groats for breakfast and added 1/2 c. pumpkin and some pumpkin pie spice (and honey). I NEVER would have thought of that and I liked it so much! Your blog is quickly becoming one of my "can't live without reads". Thanks Josie!
Hooray! I just became a FB fan so I won't miss a post.
