Clean Eating

I needed a total detox today, my body was craving some fresh greens and unfortunately food shopping has been put on the back burner lately. I picked up a huge container of baby romaine and some AppleGate Farms roasted turkey. I am becoming obsessed with their meats! you can really taste the freshness and I love the fact that I can eat lunch meat again without trying to not think about how the animal was treated and what the animal was treated with! Anyway, for lunch I made a simple salad with romaine, cucumber, torn pieces of turkey and a drizzle of oil,salt and pomegranate balsamic vinegar. For a little crunch I added honey roasted peanuts on top. I had one happy belly!!


For dinner I had the crock pot going with a pork roast that was simple and quick to throw together this morning before dropping my daughter off at school. I started with a medium pork roast (not too sure of the weight- we buy a pig each year from a local farmer so I know the meat is fresh and hormone free) and rubbed salt, garlic powder, onion powder, Italian seasonings and poured a can of tomato sauce on top. Set the crock pot on low for 7 hours and roasted potatoes on the side. Dinner was warm and inviting on this cold and rainy day. I love coming home to the house smelling like a slow cooked meal, someone should make that a candle.
