Keeping It In The Kitchen

Lately I've been using the crockpot as my main source for cooking, life has been hectic around here with little one in school and a rumbustious toddler. I'm not going to lie, since the 5k I have fallen back into a slump. I am trying desperately to eat leftovers and stay away from process foods. I'm proud of myself for not running to the drive through on the nights I work (all thanks to the crockpot and leftovers!) but it is frustrating when you can accomplish something that you've wanted for so long and turn back around at square one. Ok, enough pity party. I am moving forward and I know what needs to be done...watch my portions, eat fresher and close the kitchen at night!!

That being said, I have never been a person that can stick to rules of a diet, I eat what I want and I revamp the things I crave. This week I was craving pizza but instead of ordering it I made my quick Whole Wheat Recipe and added fresh ingredients with lots of flavor. While the dough was cooking-I ALWAYS cook my dough for 10 mins on high heat BEFORE adding the ingredients, I like a really crunchy dough-I started by cooking AppleGate Farms bacon till crispy, drained the fat and sauteed mushrooms in garlic. I added everything to the dough with sauce, mozzarella cheese and for the kicker Garlic and Chive Cheese by a local specialty hummus company, Fresh A Peel Hummus. I cooked the pizza till brown and bubbly (about 10 mins.) OH MY GOSH best pizza ever!! The dough was chewy in the middle yet crispy towards the crust. The bacon and cheese added a nice smokey zing. 


The key for me is to ENJOY what I eat and I have to remind myself of that, I know what my tendencies are and I know how I can get back into a rut with a drop of hat BUT at the end of the day it's all in how I get myself out of it and NOT beat myself up. 

I'm off to enjoy some green tea and get some much needed sleep, hope you're all having a great week!

  1. I get the falling into a rut. I can have a really good day and for no reason wake up the next morning feeling blah. You are doing great if you are staying away from the fast food joints and processed convenience foods. Pizza looks delish!
