I'm sorry what did I miss? since when is Christmas a little over 2 weeks away!? Geez time really doesn't slow down. I've been keeping all things in moderation this year, to tell you the truth I haven't had time to even make cookies yet! now that is just sad!! I am getting a little bored with my eats and have decided to take on a challenge, I know the timing isn't the best but it's better than being stuck in a rut. I have decided to cut drastically down on meat, I always base my meals around meat as opposed to using it as a side. My little man hates meat and instead of fighting him I'm joining him. As a family we need to get more plant based foods into our diet. I don't plan on cutting meat out completely but I do plan on cutting it down to 1-2 meals a week at this point. My hubby and daughter so just going to have to deal : P
For breakfast I munched on some homemade granola I made for little one's Ballet teachers. I made a Christmas mix of a Cinnamon/spice base and added Pecans, dried cranberries, and white chocolate chips. Very very yummy and highly addictive!!! I'm writing this recipe for another site I write for, as soon as I write the measurements down I'll be posting a link!
Lunch was a simple salad of romaine,carrots,cucumbers and a baked Yukon Gold all dressed in Balsamic Vinegar, Oil, Garlic Powder and Salt. I never thought I would LOVE potatoes on my salad but I'm all about texture and the mix of creamy and crunchy is just perfect.
Dinner was a poor mans dish of brown rice and beans, same recipe I used here except I used pinto beans instead of kidney. I did add the smoked sausage for flavor and Miss Ava and hubby enjoyed it greatly with the beans while little man and I enjoyed just beans : )
I'm loving the no meat dishes, I thought it would be really difficult seeing as how I would meat for 2 out of 3 meals a day. Are their any vegetarians out there!? What is your favorite dish??
