Let Them Eat (low cal) Cake!

I have been OBSESSED with Pinterest lately, the creative ideas are endless. In fact, I dragged my family around to antique shops this past weekend to unleash my creative ideas...stay tuned that'll be another post : )

lately, my sweet addiction has been getting out of hand and I have tried everything from a cup of coffee or tea after dinner, gum, a little piece of chocolate etc. and nothing has seemed to work. I wind up overindulging and feeling like crap before bed. I recently saw a pin where someone used a marshmallow as frosting and instantly my wheels started turning.

How many of my Weight Watchers friends know the golden dessert recipe of a boxed cake mix and diet soda?? It's very low in points because those are the only two ingredients, now imagine if you were able to have  frosting on it and only add .5 point? genius right?? The mix I used was Betty Crocker's Chocolate Fudge Cake mix. The mix had 1600 calories for the whole box (it was 160/serving-10 servings in a box) I think I had a heavy hand because I only got 18 cupcakes and not 24 like the box said I would. Still, that's 89 calories a cupcake or 2 points a cupcake...oh and I'm calculating using the old WW plan, I started on Weight Watchers when I was 14 years old and had the most success on the old Core Plan, however I return to the Point system when I need more structure in my eating, I have NOT tried PointsPlus and I really don't plan too. I believe if it's not broke then don't try to fix it! just my opinion : )

Prepare and bake your cupcakes as directed and at the LAST 4 minutes place a Marshmallow on top of each cupcake, when the cupcakes are done they will be soft, use your hand to squish each Marshmallow flat and let cool. Each Marshmallow is 25 calories (I used Jet Puffed) 89+25= 114 (or roughly 3 points) scoooore!!! Not only are these little gems easy and low cal/points they are goooood!! Totally satisfied my sweet craving, these are a keeper.

  1. WOW! What a great recipe. I'm definitely going to make some. When I add something like this to my food plan, I have to make sure that I have the points to spare. At 2.5 points, it can easily fit into my plan. Thanks for sharing.

  2. You're very welcome!! It was a great find and I know how you feel about depriving yourself throughout the day so you can eat dessert! I put the cupcakes in the fridge and they are even better the next day. Enjoy!! : )

  3. This would be something for me to make and take somewhere, otherwise I would eat 4-5 instead of the one I was supposed to ....lol
